I've not created a forum before and I want to add one to my literature
sites now it's over 5000 visitors a day (someone might post to a forum
and get a response now :-))
The obvious choice is http://www.phpbb.com/ but I don't have the time
right now to optimise something like this to the way I'd want it, so
anyone know of a MOD/template that is relatively optimised 'out the
box'?

You should try http://www.yabbforum.com/. No SQL database needed (uses a
flat file database.) Can get up and running VERY fast! Lots of power.

PHPbb has currently quite some security issues, so make sure you stay
tuned. A friend of mine is running a board, and it has been "hacked" two
times in one week.
A board isn't just sit back and relax, moderating, people losing passwords,
private fights etc. will eat up a lot of time.
(The friend asked some time ago if I wanted to adopt the board, and I said
"no").

With everything you've been doing lately it's amazing you even have time
to sleep let alone create a forum. But I hope you do create one and for
every post you make at mine I can feel free to make an equal amount at
yours for a change. By the way how's the drug business going?

phpBB has already neeb heavily modded for SEO.

That's the way copyright works -- you take a bunch of "pieces" and
make a "collection" out of them and then you copyright the
collection.
Sometimes each piece is a single word, sometimes each piece is a work
of Shakespeare.
Single words are not (usually) subject to copyright. Shakespeare is
out-of-date for copyright.
However, when you mix together words, or when you add color, style,
layout, or comment to Shakepeare -- you create something that is
covered by the laws of copyright.
